The process to prevent milk and wine from going sour is called pasteurization, developed by Louis Pasteur in 1862.

Louis Pasteur also confirmed germ theory of disease, reducing mortality from puerperal fever, and developed the first vaccine for rabies. Pasteur was one of the main founders of bacteriology, together with Ferdinand Cohn and Robert Koch.

The chess-board is the world; the pieces are the phenomena of the universe; the rules of the game that are what we call the rules of Nature.  The player on the other side is hidden from us.  We know that his play is always fair, just and patient.  But also we know, to our cost, that he never overlooks a mistake, or makes the smallest allowance for ignorance.

  Thomas Henry Huxley
1825-1895
